We’re well into autumn here in the land Down Under with winter just around the corner.
This is where we look towards food that warms the heart and soul.
Risottos, pasta, soups, stews, casseroles and goulash come to mind.
With the help of my amazing All-in-One Cooker… A Mushroom Risotto with Thyme.
Ingredients
90g butter
1 large brown onion finely chopped
1/2 cup dry white wine
1 litre vegetable stock
2 cups water
2 cups arborio rice
500g mushrooms (your choice) thinly sliced
2 cloves crushed garlic
2 tsp fresh thyme finely chopped
1 cup finely grated parmesan
Method
Add butter and set SAUTE/SEAR LOW TEMP. Set time for 14 minutes and press start. Then add onion and mushrooms until lightly brown.
Add garlic, thyme, wine bringing to the boil and wine almost evaporated.
Add stock, water and rice selecting RISOTTO program and press start. At this point close your lid and set valve to SEAL position.
Once cooked (14 minutes) stir parmesan through and serve topped with more thyme.
With the Philips All-in-One the whole process will take approximately 1 hour including prep.
